We finally come to the last day of our blog series for Christmas and New Year Baking 2013! Ok, so this one isn’t a “baked” recipe, but this is the perfect way to end our series as it’s tradition to eat pork and sauerkraut on New Years! I hope you enjoyed this series and have followed along with us (and forgive me for getting behind on it!) However, we did complete it! I will be posting another blog post with links to all the recipes in the series next and also adding the recipe links onto the recipes page.
Day 1: Sausage and Sauerkraut with Potatoes
4 medium potatoes, peeled and cubed
2 tablespoons canola oil
1 small onion, halved and sliced
1 lb. smoked sausage, cut into 1/4-inch pieces
1 package (16 oz0 sauerkraut, rinsed and well drained
1.4 teaspoon pepper
1/8 teaspoon salt
In a large skillet, saute the potatoes in oil for 5-6 minutes or until lightly browned. Stir in onion; saute for 3-4 minutes or until tender. Add the sausage, sauerkraut, pepper and salt. Cook, uncovered, over medium heat for 4-5 minutes or until heated through, stirring occasionally. Yield: 4 servings.
